ARTICHOKE-GREEN CHILE DIP

2 tbsp. olive oil
1 cup minced onion
2 Anaheim chiles, cored and diced
1 large jalapeno chile, minced, or 1 tbsp. minced pickled jalapeno
1, 14-oz. can artichoke hearts, drained
1-1/2 cups grated sharp Cheddar cheese
1 cup mayonnaise
Salt and pepper
Tortilla chips, for serving

Heat olive oil in a medium skillet over medium heat. Sautré onion and chiles until tender, about 5 minutes. Set aside to cool. Preheat oven to 350.

Finely chop artichokes and put them in a bowl. Add onion mixture, cheese and mayonnaise, with salt and pepper to taste. Spoon into a 1-quart baking dish. Bake until lightly browned and bubbly, about 30 minutes.

To serve, set dish on a heatproof platter, surround with tortilla chips and serve. Serves 4
