CHOCOLATE-PEANUT BUTTER BARS

12 tbsp unsalted butter, softened
2/3 cup firmly packed light brown sugar
1 large egg
1 1/2 tsp vanilla extract
1/2 cup smooth peanut butter
1 1/3 cups flour
1/2 tsp baking powder
1/2 cup semisweet chocolate chips
Preheat the oven to 350. Grease an 8 inch-square baking pan and set it aside. Cream the butter and sugar until light and fluffy, about 1 minute. Add the egg and vanilla and beat until smooth. Beat in 1/4 cup peanut butter until smooth. Stir the flour and baking powder together. Stir the flour mixture into the batter until just combined. Spread the batter evenly into the prepared pan, using your fingers or a spatula. Bake until a toothpick inserted in the center of the pan comes out clean, 18 to 20 minutes. Cool the pan on a rack for 10 minutes.
While the pan is cooling, combine the chocolate chips and remaining 1/4 cup peanut butter in a small saucepan set over low heat. Stir until the chocolate melts and the mixture is smooth. Spread the glaze evenly over the top of the bars. Cool for at least 30 minutes to allow the glaze to harden and set. Cut into bars. Makes 12 bars.
