HERBED CHICKEN AND FETTUCCINI

Category: Pasta - Chicken

1 lb boneless, skinless chicken breasts, cut into strips
1 medium yellow sweet pepper, cut into strips
1 small red onion , cut in half and sliced
1 tbsp olive oil
2 cloves garlic, minced
1/2 cup chicken broth
2 tbsp sherry
Salt and pepper
1 container garden herb spread able cream cheese
1 (9 oz) pkg fresh fettuccini, cooked al dente, do not rinse

Keep pasta warm. Meanwhile, heat oil in a skillet and saute chicken and onion 3 minutes. Add pepper and continue cooking until chicken no longer is pink and vegetables are tender. Add next 5 ingredients and cook just until hot. Blend in cream cheese and heat through. Do not boil. Combine chicken mixture with hot pasta. Serves 4.
