SIRLOIN STEAK & TARRAGON-CREAM SAUCE

1 garlic clove, minced
Cup sour cream
1/4 cup light mayonnaise
2 tbsp Dijon mustard
1-1/2 tsp dried tarragon
1/4 tsp kosher salt
1/4 tsp ground black pepper
Nonstick cooking spray
1-1/4 lbs boneless beef loin sirloin steak
In small serving bowl, stir garlic, sour cream, mayonnaise, mustard, 1 tsp tarragon, salt and pepper until well blended; set aside.
Spray grill pan with nonstick cooking spray. Rub steak with remaining 1/2 tsp tarragon and sprinkle with additional salt and pepper, if desired. Preheat grill pan over medium-high heat 2 minutes. Add steak and cook 10 minutes, turning every 2 to 3 minutes, or until internal temperature reaches 145 degrees for medium-rare, or cook to desired doneness.
Transfer steak to cutting board; let stand 5 minutes. Cut steak diagonally across the grain into 1/4-inch-thick slices and transfer to warm serving platter. Pass tarragon-cream sauce to serve with steak. Serves: 4
