CRACKED PEPPER AND CHIVE BUTTER

1 small lemon, squeezed
1/2 cup unsalted butter, softened
1/2 tsp salt
1 tsp ground peppercorn melange
2 tbsp chopped fresh chives

Place 1/2 tsp lemon juice into a bowl. Add butter, salt and pepper and beat until light and fluffy. Reduce speed to medium and add chives and continue beating until well blended.

If not serving right away, cover and refrigerate until ready to use. Allow butter to stand at room temperature 30 minutes to soften slightly before serving.
