POTATO AND MUSHROOM GRATIN

3 tbsp unsalted butter
1 (8 oz) pkg sliced mushrooms
1 medium onion, chopped
1 pint whipping cream
1 1/2 tsp salt
1 tsp pepper
Nonstick cooking spray
2 lbs Yukon gold potatoes, about 2 lbs, peeled and thinly sliced
2 cups shredded Swiss cheese
Fresh chives, garnish
Preheat oven to 325. In a nonstick skillet, melt butter and add mushrooms and cook 6-8 minutes or until mushrooms begin to brown. Stir in onion and cook 4-5 minutes or until mushrooms and onions are tender, stirring occasionally. Stir in cream, salt and pepper; heat to boiling. Reduce heat to medium-low; simmer for 2 minutes, stirring occasionally.
Spray a shallow 2-3 quart baking dish with cooking spray. Spread half potatoes slices in dish; top with half mushroom mixture; sprinkle with half the cheese. Repeat layers. Bake, uncovered, for 1 to 1 1/2 hours or until potatoes are tender in center and top is golden. Let stand 10 minutes before serving. Garnish with chives. Serves 10
