1 French bread baguette, ends trimmed with diagonally sliced into about 1/2 inch thick slices
2 tbsp olive oil
1 lime, squeezed
2 (7 oz) pkg refrigerated guacamole
1 cup salsa verde
1/2 small English cucumber, very thinly sliced
8 cherry or grape tomatoes, quartered
Fresh thyme sprigs, for garnish
Preheat oven to 400. Arrange bread on a baking sheet and brush with olive oil on tops. Bake 8-10 minutes or until crisp. Cool bread in pan.
Meanwhile, stir together 1 1/2 tsp lime juice, guacamole and salsa.
To serve, spread 1 rounded tbsp guacamole mixture onto each bread slice. Top with cucumber slices, tomato and thyme.
