SEARED SEA SCALLOP SALAD

1 small shallot, minced, about 2 tbsp
1/3 cup plus 1 tbsp olive oil, divided
2 tbsp white wine vinegar
4 tbsp chopped fresh tarragon leaves
2 tsp Dijon mustard
1 lb large sea scallops, patted dry
1/2 tsp salt
1/8 tsp pepper
1 (5 oz) pkg spring mix salad greens
1 (11 oz) can mandarin oranges in light syrup, drained

In a small bowl, whisk shallot, 1/3 cup oil, vinegar, tarragon and mustard; set aside.

In a skillet, heat remaining oil and saute scallops, seasoning with salt and pepper. Cook 4-6 minutes or until golden brown, turning once

To serve, arrange greens on each salad plat; top with scallops and orange segments. Whisk dressing again and spoon over salads to serve. Serves 4
