CREOLE ONION SOUP

1 cup unsalted butter
3 medium onions, thinly sliced
1/2 cup flour
2 quarts Chicken Stock
1 small bay leaf
3 oz Cheddar cheese, shredded
1/2 cup dry white wine
Salt and freshly ground black pepper, to taste
Melt butter in a large heavy saucepan and saute sliced onions briefly. Just before they become transparent, add flour and stir well. Add stock, bay leaf, cheese and wine. Stir over low heat until cheese is thoroughly melted, then simmer for about 15 minutes. Correct seasonings with salt and pepper and serve immediately. Serves 6 to 8.
