2 cups fresh blueberries
1/2 cup sugar
2 tbsp fresh lemon juice
1 tsp finely grated lemon zest
Pinch ground cinnamon
1 tbsp water
1-1/2 tsp cornstarch

In a medium saucepan, combine the blueberries, sugar, lemon juice, lemon zest and cinnamon and stir to combine. Cook over medium-high heat for 5 to 7 minutes, until the berries soften and begin to release their juice. Reduce the heat to medium and stir until the mixture is smooth and no berries remain intact. In a small cup, combine the water and cornstarch and stir to blend. Add to the blueberry mixture and stir to blend. Cook for about 1 minute more, until mixture thickens. Remove from the heat and set aside to cool for about 2 minutes, then serve.

To store, let cool, cover, and refrigerate for up to 3 days. Reheat for a few seconds in a microwave oven or in a saucepan over low heat.
