SPICY BLUEBERRY DRESSING

Category: Salad Dressing

1/2 cup light corn syrup
1/4 tsp ground ginger and black pepper
1 cup fresh or frozen, unthawed blueberries
2 tbsp fresh lemon juice

In a medium saucepan, over medium high heat, combine first three ingredients. Stir in berries, return to a boil. Remove from heat; stir in lemon juice. Cook 5 minutes. Transfer mixture to a blender container and blend. Serve warm drizzled over sliced melon or other fresh fruits.
