SWEET SHRIMP AND ANGEL HAIR PASTA

1/4 cup ketchup
3 tbsp soy sauce and water
4-5 dashes hot red pepper sauce
1 tbsp peanut or vegetable oil
1 large red pepper, cored, seeded and cut into squares
2 medium carrots, peeled and coarsely shredded
2 cloves garlic, minced
8 oz angel hair pasta, cooked according to directions
1 lb medium shrimp, shelled and deveined
3 scallions, including tops, thinly sliced
1/3 cup unsalted dry-roasted peanuts

Combine first 4 ingredients; set aside. Heat oil in skillet and add vegetables and garlic, sauté for 5 minutes. Add shrimp to skillet and sauté until almost cooked through, about 2 minutes. Add sauce mixture, stir well and cook 1 minute more. Stir in scallions and peanuts. Add pasta and toss.
