GRILLED SHRIMP ON A STICK

8 bamboo skewers
16 (1×6 inch) paper-thin slices Canadian bacon or country ham
16 uncooked large shrimp, peeled, deveined
1/2 cup Dijon mustard
1/4 cup bourbon
1/4 cup packed light brown sugar
Vegetable oil

Soak bamboo skewers in water to cover 30 minutes; drain. Wrap one slice of Canadian bacon around each shrimp. Thread 2 shrimp onto each skewer. Arrange on a baking sheet.

Combine Dijon mustard and bourbon in a bowl and mix well. Brush both sides of the shrimp with the mustard mixture. Marinate in refrigerator 30 minutes to 2 hours.

Press 2 tbsp brown sugar through a sieve over the shrimp. Turn the shrimp. Repeat process with remaining brown sugar. Let stand at room temperature 15 minutes.

Brush grill rack with oil. Arrange shrimp skewers on the rack. Grill over medium-high heat for 3 minutes per side or until cooked through. Remove to a serving platter and serve at once. Serves 8.
