WILD BERRY SABAYON

4 oz fresh blackberries, blueberries and raspberries
1 oz Chambord and Marsala wine
4 each egg yolk
8 oz sugar

Combine berries, Chambord, 4 oz sugar and set aside for one hour. Combine egg yolk and 4 oz sugar in a bowl. Place over a double boiler on medium high heat. Wisk eggs and sugar until eggs thicken to a ribbon stage. Add marsala wine. Place berries in a bowl and cover with the sabayon.
