DOUBLE CHOCOLATE BOURBON PECAN CUPCAKES

Cupcake:
1 box dark chocolate fudge cake mix
1 cup water
1/3 cup bourbon
1/2 cup oil
3 eggs
1 cup chocolate shavings
1 cup chopped pecans
3/4 cup light brown sugar
Frosting:
2 lb shortening
2 tsp vanilla flavoring
2 lb confectioners sugar
1/2 cup cocoa powder
10 tbsp water
Preheat oven to 350. Line pan with cupcake liners.
Prepare mix using water, bourbon, oil and eggs. By hand, mix chocolate shavings, chopped pecans, and light brown sugar. Pour batter halfway into prepped cupcake liners. Sprinkle chocolate/pecan/brown sugar mixture onto batter, fill to 3/4 full. Repeat for each liner. Bake for 20 min, or until firm.
Prepare frosting, combining shortening and vanilla flavoring. Slowly add confectioners sugar, cocoa powder, and water until it has a medium consistency.
When cupcakes cool, frost and add leftover chocolate/pecan/brown sugar mixture as topping.
