1 box dark chocolate fudge cake mix
1 1/3 cup water
1/4 cup canola oil
3 large eggs
8 oz sour cream
1 cup flour
1 cup sugar
3/4 tsp salt
1 1/2 tsp vanilla extract
1 1/2 tsp instant espresso powder

8 oz bittersweet chocolate
6 oz semi-sweet chocolate
9 oz cream cheese, room temperature
9 tbsp unsalted butter, room temperature
3 cup confectioners sugar, sifted
6 tbsp Dutch-process cocoa powder
Pinch of salt
1 cup plus 2 tbsp sour cream

Garnish: Graham cookies and crumbs

Preheat oven to 325. Place cupcake liners in pans.

Add all ingredients, starting with wet, to a bowl. Mix on medium for 2 1/2 minutes. Scoop 1/4 cup batter into each liner. Bake 12-17 minutes or until done.

For frosting, slowly melt chocolates in the microwave. Cool. Beat cream cheese and butter on medium-high for 3-4 minutes. Mix in confectioners sugar, cocoa and salt. Beat in cooled chocolates and then sour cream. Beat until smooth. Frost cupcakes. Top with cookies and crumbs.
