SALMON WITH PISTACHIO-BASIL BUTTER

1 cup lightly packed fresh basil leaves
6 tbsp toasted pistachio nuts
1 tbsp fresh lime juice
1 1/2 tsp finely chopped garlic
7 tbsp butter, melted
Salt and pepper
6 (6 oz) skinless salmon fillets
1 tbsp cooking oil
In a food processor, combine first 5 ingredients. Process until basil and pistachios are finely chopped, stopping to stir as necessary. Transfer to a bowl; season to taste with salt and pepper. Refrigerate up to 30 minutes while preparing fish.
Rinse fillets and pat dry. Brush both sides of the fish with the oil. Season with salt and pepper.
Grill, uncovered, directly over medium coals for 4-5 minutes per 1/2 inch thickness, turning once. Serve with some of the pistachio-basil butter. Serves 6
Note: Store any leftover pistachio-basil in refrigerator up to 1 week. Good tossed in hot pasta or spread on toasted French bread.
