HAWAIIAN LUAU COOKIES

1/2 cup butter, softened
1/2 cup sugar and packed brown sugar
1 egg
1/2 tsp vanilla extract
1 (8 oz) can crushed pineapple, drained
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup macadamia nuts, toasted and coarsely chopped
1 cup sweetened shredded coconut

Preheat oven to 375. Cream butter and sugars until fluffy. Add eggs and vanilla and beat until mixed. Beat in the milk. Stir in pineapple. Mix dry ingredients. Stir in the dry ingredients, coconut and nuts. Drop dough by tbspfuls 2 inch apart onto lightly greased baking sheet. Bake for 8-10 minutes. Let cool 1 minutes then transfer to wire rack to cool. Store in airtight container.
