BOURBON MARINATED SALMON

Category: Seafood and Fish - Grilled

1/4 cup fresh lemon juice (about 6 small lemons)
1/4 cup soy sauce and bourbon
3 cloves garlic, pressed
3 tbsp dark brown sugar
2 tbsp olive oil
4 tsp seafood seasoning and chopped fresh chives
2 tsp finely chopped onion
1/2 tsp salt and pepper
4 (8 oz) salmon fillets (1 inch thick)
Garnish with fresh chives

Combine first 11 ingredients in a large freezer bag. Add salmon, and seal bag. Marinate in refrigerator at least 3 hours up to 24 hours. Remove salmon from marinade, discarding marinade. Grill salmon with flesh side down first, cover over medium high heat (350-400) 12 minutes or until fish flakes with a fork, turning once. Garnish. Serves 4
