HOT OFF THE GRILL CHICKEN

Category: Poultry I

1/2 cup olive oil
2 cloves garlic - halved
2 tbsp fresh rosemary
1 tbsp fresh oregano
1 tsp cracked black pepper
1 tbsp garlic chives or chives - snipped
1 tsp salt
1 tsp dry mustard
1 21/2-3 lb broiler fryer chicken - cut up

In a blender container, combine all ingredients except chicken. Cover and blend till nearly smooth.

Rinse chicken; pat dry with paper towels. Rub all surfaces of chicken with herb mixture. Place chicken pieces on a grill rack, bone side up, over medium coals.

Grill, uncovered, for 35 to 45 minutes or till tender and no longer pink, turning pieces over after 18 minutes. To test for medium heat, you should be able to hold your hand over heat at food height for 4 seconds.
