Grilled - GREEN BEANS WITH LEMON, BUTTER AND PARMESAN CHEESE

1 lb fresh green beans
3 tbsp extra-virgin olive oil
2 cloves garlic, minced
1 tsp grated lemon zest
Kosher salt
Fresh ground black pepper
2 oz Aged parmesan cheese
2 cups wood chips, preferably oak, unsoaked

Wash the green beans and cut off the ends.

In a small bowl combine the olive oil, garlic and lemon zest and stir with a fork to mix. Brush some of this mixture on both sides of the green beans. Season the green beans with plenty of salt and pepper.

Set up the grill for direct high heat and preheat. If using a gas grill, place all of the wood chips in the smoker box or smoker pouch. Run the grill on high until you see smoke. If using a charcoal grill, preheat it to high, then toss all of the wood chips on the coals.

Place the green beans on the grill and cook until nicely browned on both sides, 2 to 4 minutes on each side. Transfer to a platter. Drizzle any remaining lemon garlic oil over the green beans and grate the cheese on top. Serves 4
