GREEK CHICKEN WITH ONIONS & TOMATOES

1 pkg boneless skinless chicken breasts
1 container plain low fat yogurt (8 oz)
2 cloves garlic, finely chopped
4 tbsp olive oil, divided
2 tbsp chopped fresh mint (alternate: and/or oregano)
2 tbsp lemon juice
1 tbsp hot pepper sauce
1/2 tsp salt
2 onions, cut into wedges
1 tomato, seeded and coarsely chopped

In large, shallow non-aluminum baking dish, combine yogurt, garlic, 2 tbsp oil, mint, oregano, lemon juice, hot pepper sauce and salt until well blended. Add chicken cut into 1 inch chunks, turning to coat with marinade. Cover and marinate in refrigerator up to 3 hours.

Preheat grill or broiler. In medium bowl, combine onions, remaining 2 tbsp oil and salt to taste and toss until evenly coated. Remove chicken from marinade and discard marinade. Grill or broil chicken, turning occasionally, 15 minutes or until meat thermometer inserted in center registers 170 degrees. Grill onions in grill wok or on grill screen, stirring occasionally, until tender. Add tomato and grill just until heated through. Serve grilled vegetables over chicken. Serves 4
