1 1/2 cups chopped fresh red ripe strawberries
1/4 cup sour cream
2 tbsp sugar, or to taste
1/4 tsp vanilla
1/2 cup heavy whipping cream, unwhipped (35%)
In a blender (or food processor) combine the chopped strawberries, sour cream, sugar and vanilla; cover and blend/process until smooth.
In a small mixing bowl beat whipping cream until stiff peaks form; fold into the strawberry mixture. Refrigerate at least 1 hour or more before serving.
