PEPPY MEATBALL SUBS

1 (28 oz) jar spaghetti sauce, divided
1 egg
1 cup seasoned bread crumbs
1 medium onion, chopped
1/2 cup chopped sweet red pepper
1 garlic clove, minced
1/2 tsp Italian seasoning
1/4 tsp salt and pepper
1 lb ground beef
6 submarine or hoagie buns, split
1 (11 1/2 oz) jar pepperoncinis, drained and sliced
1 (2 1/4 oz) can sliced ripe olives, drained
Shredded parmesan cheese
Thinly sliced red onion

In a large bowl, combine 1/2 cup spaghetti sauce and next 6 ingredients and seasonings. Crumble beef mixture over and mix well. Shape into 1 inch balls. Place in a single layer in an ungreased jelly-roll pan. Bake at 350 for 15-20 minutes or until meat is no longer pink, turning once; drain.

Transfer to a large saucepan; and add remaining sauce. Bring to a boil. Reduce heat; cover and simmer 15 minutes. Spoon meatballs and sauce onto bun bottoms. Top with remaining ingredients and replace bun tops. Makes 6 sandwiches.
