GRILLED ROSEMARY SWORDFISH OR TUNA

Category: Seafood and Fish - Grilled

2 tsp dried rosemary and grated lemon rind
3 cloves garlic, minced
4 (1 inch thick) swordfish or tuna steaks
2 tbsp olive oil and lemon juice
1/2 tsp pepper
Garnish, lemon wedges, fresh rosemary sprigs

Combine first 3 ingredients. Place fillets in a baking dish; press rosemary mixture evenly on top of each steak. Combine next 3 ingredients and pour over fish. Cover and chill for 1 hour.

Preheat grill for medium-high heat. Brush oil on grill grate. Remove fish from marinade, discarding marinade and placing fish on grill grate. Grill, covered, about 6 minutes on each side or until done (check tuna after about 4 minutes). Garnish as desired. Serves 4
