2 cups grated sharp Cheddar cheese
1 cup all-purpose flour
1/2 cup butter, softened
1/2 tsp salt
1 pkg (3 oz) cream cheese, softened
3 oz Brie cheese, softened
1 tsp minced garlic
Sliced pimiento-stuffed green olives for garnish

Preheat oven to 375. Combine Cheddar cheese, flour, butter, salt, cream cheese together in a large bowl. Knead with hands, shaping dough into a smooth ball. Cover and refrigerate for an hour. Shape dough into small, 1-inch balls and place on greased cookie sheet. Bake for 12-15 minutes or until lightly browned. Cool on wire rack.

In a small bowl, blend cream cheese, garlic and brie together until smooth. Refrigerate for an hour. Spoon cheese mixture into a plastic baggie. Cut small corner out of bag and squeeze cheese mixture onto each biscuit before serving. Garnish each cheese blossom with 1 slice of olive. Makes about 36 cheese blossoms.
