CHOCOLATE MINT CHEESECAKE

Crust:
1 3/4 cup chocolate wafer crumbs
1/4 cup melted butter
Combine and press into bottom 2inch up sides of a 9inch springform pan.
Filling:
3 (8 oz) pkg cream cheese, room temperature
3/4 cup sugar
3 eggs
1/3 cup creme de menthe liqueur or 3/4 tsp mint extract with 10 drops green food coloring.
3 squares white chocolate, melted
Heat oven to 325. Beat cream cheese and sugar until very smooth. Beat in eggs one at a time until just blended. Beat in liqueur and melted chocolate. Pour over prepared crust and bake for 50 minutes or until centre is just set. Remove from oven and run a knife around the edges to loosen. Cool at room temperature and chill overnight.
Mint Curls:
1 mint chocolate bar
Make curls by running a vegetable peeler along the narrow edge of the bar. Place on top of the cooled cheesecake.
