GRILLED DOUBLE CHEESE STUFFED CHICKEN BREASTS

3 oz cream cheese, softened
1/2 cup crumbled blue cheese
1/4 cup chopped walnuts
2 tbsp snipped chives, divided
3/4 tsp coarsely ground black pepper, divided
8 boneless, skinless chicken breasts, about 3 oz each
1/2 cup butter
1 clove garlic, crushed
Combine cheeses, nuts, 1 tbsp chives along with 1/4 tsp pepper; set aside.
Flatten chicken to about 1/4 inch thickness. Spread about 1 tbsp filling in center of each of the 4 chicken breast halves, leaving a 1/2 inch border on all sides; reserving cheese mixture. Top with remaining breast halves. Securely seal edges with the meat pounder.
Melt butter and garlic, remaining chives and pepper. Remove from heat. Brush chicken with butter.
Prepare grill for medium heat. Grill 12-16 minutes, turning once. When chicken is done, dollop with remaining cheese mixture before serving. Serves 4
