SANTA FE SPINACH DIP

1 medium onion chopped (small)
1 clove garlic, minced
2 pkgs frozen spinach, thawed, and squeezed dry
1 small can plum tomatoes chopped (small)
1 (4 oz) can green chilies chopped and drained
1 (8 oz) pkg cream cheese, softened
1 cup half-and-half
10 oz grated Monterey Jack cheese (I like to use the pepper jack)
1 tbsp red wine vinegar
2 tbsp sour cream
Salt and pepper, to taste

Saute onion and garlic in skillet over medium until onion is softened. Add spinach, tomatoes and chilies; cook 2 minutes. Transfer to large bowl and stir in cheese, cream cheese, half-and-half and vinegar. Season with salt and pepper. Spoon mixture into shallow baking dish. Bake at 400 until dip is bubbly and top is lightly brown, about 35 minutes. Top with sour cream and serve with tortilla chips.
