SMOKED SALMON CHEESECAKE I

1/2 cup crushed crackers
2 (8 oz) pkg cream cheese, softened
4 eggs
1 cup Monterey jack cheese, shredded
1/2 cup sour cream
4 oz smoked salmon, chopped
1/4 cup minced red onion, chopped red and green bell peppers
1 tsp dried dill
1/4 tsp cayenne
Sprinkle crackers crumbs in the bottom of a lightly greased 9 inch springform pan; set aside. Combine cream cheese until fluffy. Add eggs, one at a time, beating well after each addition. Add remaining ingredients and mix until well blended. Pour into prepared pan. Bake at 325 for 45-40 minutes.
Cool on a wire rack for 10 minute. Gently run a knife around the edge of the pan to release sides. Cool completely.
Refrigerate until serving time. Serve at room temperature with crackers. Serves 25
