Shelly's Recipe

*COTTAGE MEATLOAF*

1 1/2 lbs lean ground beef
1/2 cup ketchup
1/3 cup tomato juice
2 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp garlic powder
1/8 tsp crushed red pepper
2 eggs, beaten
3/4 cup fresh bread crumbs
1/4 cup diced onion
2 tsp prepared mustard

Topping
1/2 cup ketchup
1 tsp prepared mustard
4 tsp brown sugar

Preheat oven to 400. In a large bowl, combine the ingredients until well mixed. Line a loaf pan with foil. Press meat mixture into pan.

In a separate bowl, combine topping ingredients until smooth. Spread brown sugar mixture over meatloaf. Bake for 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.
