PROSCIUTTO QUESADILLA

8 (6") flour tortillas
8 oz mozzarella cheese, grated or thinly sliced
1/2 red onion, thinly sliced
Coarsely ground black pepper
4 thin slices prosciutto, cut into strips
1 oz grated parmesan cheese
Finly chopped rosemary
Olive oil
Place 4 tortillas on a work surface. Divide mozzarella evenly amoung tortillas (If using fresh mozzarella, piece the slices together.) Sprinkle with onion, pepper to taste, prosciutto, parmesan and rosemary. Top each with another tortilla.
Heat a large skillet or griddle over medium-high heat until hot but not smoking. Add quesadillas without crowding. Cook until the bottom tortilla is lightly speckled with brown, 2-3 minutes. Turn; cook until the other side is lightly browned and the cheese is almost melted, 2-3 minutes. Depending on how thickly sliced the cheese, you may need to reduce the heat to medium.
Transfer to a cutting board; let cool slightly. To serve, cut into quarters; drizzle with olive oil. Serve warm.
