1 box long grain and wild rice mix
1 (4 oz) pkg sliced mixed mushrooms
1 tbsp olive oil
1/4 cup loosely packed fresh parsley leaves, chopped
1/2 tsp grated fresh lemon peel

Prepare rice as directed but do not add butter. Meanwhile, place mushrooms and oil in a small bowl. Cover with plastic wrap, venting some. Cook mushrooms on high for 2 minutes, stirring once halfway through cooking. Set aside. When rice is done, stir in mushrooms mixture, parsley and lemon peel. Serves 4
