BAHAMIAN GRILLED CHICKEN

Category: Poultry I

4 chicken breast halves, skin on and bone in
Salt and pepper
Juice of 2 fresh limes or 1 lemon
2 tbsp oil
1/4 cup finely diced bacon
1/2 cup finely chopped onion
1/2 cup thinly sliced green pepper and celery
2 cups diced tomatoes and their juices
1 cup chicken stock
1 tbsp Worcestershire sauce
1/2 tsp dried thyme

Season chicken with salt and pepper; marinate in juice 10 minutes while heating up grill. Grill for 10 minutes on each side or until just cooked through. Keep skin on as you grill to keep moist. While chicken is cooking, make the sauce.

Sauce: In a saucepan, heat oil and bacon until brown. Add onion and chopped vegetables and cook covered over low heat until tender. Add remaining ingredients and simmer, uncovered, for 10 minutes. Season with salt and pepper, to taste.
