CONTINENTAL RICE CASSEROLE

1/4 cup minced onion
1/4 cup slivered almonds
1/4 cup butter
1 cup converted rice
2 1/4 cups chicken stock or bouillon
1/2 tsp salt
1/4 tsp white pepper
1 cup cubed cooked chicken
1 cup cubed cooked ham
1 cup cubed cooked beef
1 medium apple, peeled and sliced
1 cup grated Cheddar cheese
1/4 cup Sauterne
1 tbsp chopped green celery tops (optional)
Saute onion and almonds in butter or margarine until golden. Stir in rice and saute until light brown. Add stock or bouillon, salt and pepper. Bring to a boil; cover. Simmer 15 minutes. Stir in chicken, beef, ham and apples. Return to a boil. Cover; simmer 10 minutes.
Pour into a 2-1/2 quart casserole. Sprinkle with cheese and wine. Bake 10 to 15 minutes at 350. Garnish with celery tops if desired. Serves 5 to 6.
