32 (3-1/4x3-1/4inch)won ton wrappers
1 cup shredded cheddar cheese
1(8-oz.)package cream cheese, room temperature
Ground red pepper, to taste
1 tbsp Dijon-style mustard
1/2 cup finely diced red bell pepper
2 or 3 green onions, thinly sliced
1(14-oz.) can artichoke hearts, drained & finely chopped
1 tbsp finely chopped fresh parsley
Fresh parsley leaves & shredded Parmesan, for garnish

Preheat oven to 350. Spray 32 miniature muffin cups with non-stick cooking spray. Gently press won ton wrapper into each muffin cup, allowing ends to extend above the cups. Spray the edges of the wrappers with non-stick cooking spray.

Combine cheese, cream cheese, cayenne pepper, and mustard in a bowl and mix well. Stir in bell pepper, green onions, and artichoke hearts. Spoon 1 tbsp cheese mixture into each cup. Bake for 20 minutes, or until cheese mixture is set and edges of wrappers are lightly browned. Garnish with parsley and shredded Parmesan, if desired.
