STUFFED CUCUMBERS

6 small cucumbers
6 oz cream cheese, room temperature
2 tbsp sour cream
1 tbsp fresh chives and dill, chopped
Salt and pepper
1 small jar capers, drained

Scrape unpeeled cucumbers with fork tines. Cut into 2 inch thick slices; seed. Combine the next 6 ingredients. Fill cucumber rings with mix and dot the tops with several capers. Chill for several hours.
