MAINE CRAB CAKES

1 lb Maine crabmeat
3 cups crushed Ritz cracker crumbs
1 tsp dried cilantro
1 tsp paprika
1 tsp salt
1/4 tsp ground black pepper
1 tbsp parmesan cheese
4 tbsp mayonnaise
1 oz heavy cream
1 egg
1 red bell pepper, diced
1 medium onion, diced

In a large bowl, mix dry ingredients together.

In food processor, puree approximately each of the red pepper and onion. Add the mixture to the dry ingredients. Beat the egg in a separate bowl. Add to the dry ingredients. Add mayonnaise, heavy cream and parmesan cheese. Using a spoon or your hands, mix all ingredients together well. Add crabmeat mixing slightly until distributed throughout the cracker mix.

In a large saute pan, brown cakes on both sides. Transfer to a baking sheet and bake in the oven at 350 for 10-15 minutes. Serve with sherry cayenne mayonnaise. Serves 4 (2 cakes each)

To make the sherry cayenne mayonnaise, mix together 1 cup of mayonnaise, 1 oz sherry, 1 tsp cayenne.
