ORIENTAL CHICKEN

1/2 cup sesame oil and soy sauce
1/4 cup minced fresh ginger
2 lbs chicken cutlets
Vegetable oil
1 cup chicken broth
1/2 cup butter, melted
4 tsp dry mustard, made into a paste with a small amount of water
Mix sesame oil, soy sauce and 2 tsp ginger. Marinate the chicken at least 1 hour, but no longer than 2 days. In a skillet, fry 1 minute on each sides in a small amount of oil. Drain on paper towels. Wipe out the skillet.
In the skillet, combine the broth, butter, remaining ginger and the mustard past. Add chicken to the pan and cover. Cook slowly for 30 minutes or until done. Place chicken on a platter and cover with the sauce. Serves 8
