MULTI-PURPOSE GRILLING SAUCE

2 tbsp fresh grated ginger
1/2 cup pineapple and orange juice
3/4 cup chardonnay or whisky
1/2 lb dark brown sugar
1/2 tsp garlic powder
3 oz tomato paste
1/2 cup soy sauce

Sauté ginger and garlic in oil. Add juices and paste, stir to combine. Add remaining ingredients, stir and simmer. Adjust seasoning to taste. Dip meat in sauce and place on grill over hot coals. When meat is turned, brush with sauce. Grill to desired doneness. Just before meat is removed from grill, brush again with sauce.
