SMOKED SALMON CROSTINI

Category: Bruschetta, Crostini and Canapes


1/4 cup olive oil, divided
1/4 lb smoked salmon, thinly sliced
1 shallot, minced
2 tbsp minced fresh chives and dill
1/4 tsp pepper
1/2 tsp grated lemon rind
1 tbsp lemon juice
1 tbsp coarsely chopped capers
1 French baguette

Combine 2 tbsp olive oil, salmon and next 7 ingredients; cover and chill 2 hours. Cub baguette into 24 (1/4 inch thick) slices. Brush both sides of slices with remaining oil. Bake bread slices at 350 until golden brown, 10 minutes or until golden and crisp, turning occasionally. Spoon salmon mixture onto slices; serve immediately.
