VANILLA CREME ANGLAISE SAUCE

8 large egg yolks
5 tbsp sugar
Pinch salt
2 1/2 cups milk
1/2 vanilla bean

Fill a medium bowl 1/3 full of ice water. Set aside. In a medium mixing bowl, whisk together the yolks, sugar and salt. Put the milk in a double boiler. Cut vanilla bean in half lengthwise, scrape out the insides of the bean and add the entire bean and scrapings to the milk. Scald the milk over medium heat. Slowly whisk the milk mixture and cook over medium heat, stirring constantly until it coats the back of the spoon, about 5 minutes.
