ITALIAN BEEF STEW - Crockpot

1 1/2 lb stew meat
1 tbsp oil
2 medium carrots, cut into 1/2 inch pieces
2 stalks celery, cut into 1/2 inch pieces
1 cup quartered fresh mushrooms
1/2 cup sliced green onions
3 tbsp quick-cooking tapioca
1 (14 1/2 oz) can Italian-style stewed tomatoes, undrained
1 cup beef broth
1/2 cup dry red wine or beef broth
1 tsp dried Italian seasoning, crushed
1/2 tsp salt
1/4 tsp pepper
1 bay leaf
3 cups hot cooked noodles
Brown meat in hot oil, half at a time; drain and transfer to a 3 1/2 - 4 quart crock pot. Drain off fat. Add vegetables and sprinkle with tapioca. Combine remaining ingredients except noodles. Cover; cook on LOW setting for 8-10 hours or HIGH 4-5 hours. Discard bay leaf. Serve over hot noodles. Serves 6-8
