IRISH STEW

2 lb stew meat, beef and/or lamb
Salt and pepper
4 large onions, thickly sliced
8 medium potatoes, peeled and thickly sliced
2 tbsp crumbled dried thyme
2 cups water
3 tbsp parsley

Preheat oven to 325. In a casserole dish, layer the meat, onions and potatoes and salt, pepper and thyme between layers, starting and ending with potatoes. Add the water slowly without disturbing the layers, cover the casserole dish, put in the oven, and bake for 2 hours. Sprinkle with parsley and serve. Serves 6
