HOT TAMALE PIE

3 tbsp salad oil
2 medium green bell pepper, diced
1 large onion, chopped
2 lbs ground beef
2 tsp salt
1/4 tsp pepper
1 (1 lb) can tomatoes
1 tbsp chili powder
1 (12 oz) pkg corn muffin mix
1 cup evaporated milk
3/4 cup grated sharp cheddar cheese

Heat oil in a skillet and add green peppers and onion; cook until onion is tender, but not brown. Sprinkle beef with salt and pepper and brown, breaking up meat with fork. Add tomatoes and chili powder. Let simmer while preparing topping.

Follow pkg for preparing corn muffin mix. Omit egg; substitute cup evaporated milk for liquid called for on package.

Pour hamburger mixture into a casserole and top with corn muffin mixture. Sprinkle top with grated cheese. Bake at 400 for 20 minutes. Serves 8
