FIESTA LASAGNA

1 lb lasagna noodles
2 lbs lean ground beef
1 sweet onion, chopped
2 garlic cloves, minced
1 tsp. cumin
1 tsp chili powder
1 (8 oz) jar picante sauce
1 cup corn thawed
1 16-oz container cottage or ricotta cheese
2 (4 oz) cans diced green chilies
1 cup Monterey Jack cheese, shredded
1 cup black olives, sliced
1 cup Cheddar cheese, shredded
1 cup sour cream

Prepare pasta according to pkg directions. Brown ground beef in a large skillet with onion and garlic. Add cumin, red pepper, cayenne pepper and salsa; cook over low-medium heat for several minutes. Remove from heat.

Combine ricotta, chilies and Monterey Jack cheeses and mix well.

Spread 1/2 to 1 cup meat mixture over bottom of a 13x9 inch baking dish. Layer with some noodles, then cheese mixture, corn and sauce. Repeat layering, beginning and ending with sauce. Cover with foil and bake at 350 degrees for 30 minutes. Uncover, top with sour cream, black olives and cheddar cheese. Slice and serve. Serves 8
