ELEGANT BEEF BLUE

8 small asparagus spears or steamed broth
4 (4 oz) beef tenderloin steaks
Salt and pepper
2 tbsp olive oil
1 cup dry white wine
1/2 cup beef broth and whipping cream
1 1/2 oz crumbled blue cheese

Snap off tends of asparagus and remove scales. Cut the spears I half and place in a steamer basket over boiling water. Cover and steam just until tender-crisp. Blanch in cold water and drain on paper towels. Rub the steaks with salt and pepper. Heat the oil in the skillet over medium heat. Add the steaks and cook 3-5 minutes on each side or to desired degree of doneness. Remove steaks and keep warm; reserve drippings in pan.

Preheat broiler. Stir wine and broth into the drippings and increase the heat to high. Cook, stirring often, until reduced to 1/2 cup. Add whipping cream and cook, stirring constantly, until reduced to desired consistency. Place steaks on broil and stop with steamed asparagus. Crumble with blue cheese and broil just until the cheese melts. Serve immediately with sauce. Serves 4
