CHOCOLATE WALNUT BARS

Crust
1/2 cup walnuts
1/3 cup sugar
3/4 cup flour, softened
6 tbsp cold unsalted butter, chopped
Topping
2 tbsp unsalted butter
1/3 cup water and cocoa powder
1/2 cup sugar
1 tsp vanilla extract
Pinch of salt
2 eggs
Confectioners sugar, for dusting
Preheat oven to 350. Grease an 8 inch square cake pan. Grind walnuts with a few tbsp sugar. In a bowl, combine first 3 ingredients. Add butter and combine until mixture resembles coarse crumbs. Pat mixture into bottom of pan in an even layer. Bake at 25 minutes.
Topping: Melt butter in a small saucepan. Beat in cocoa and sugar. Remove from heat, stir in vanilla and salt; allow to cool for 5 minutes. Beat in eggs until blended. Pour topping evenly over crust when cooked. Return to oven; bake for 30 minutes until set. Place pan on a wire rack to cool. Cut into bars, dust with confectioners sugar. Store in refrigerator.
