SHRIMP MOLD

1 envelope unflavored gelatin
1/2 cup water
1 (8 oz) pkg cream cheese
1 (8 oz) bottle Thousand Island dressing
1/4 - 1/2 tsp Old Bay seafood seasoning
1 tsp lemon juice and Worcestershire sauce
2 tbsp green onion
1 tbsp green bell pepper
1 lb cooked shrimp
2-3 stalks diced celery

Grease 1 quart gelatin mold. In top of a double boiler; place gelatin, water and cream cheese and heat until melted. Mix well; remove from heat. Cool slightly. Add remaining ingredients. Stir to mix. Pour into prepared mold and refrigerate several hours until completely set, about 2-3 hours or overnight. Unmold on a bed of crisp lettuce.

NOTE: Can substitute horseradish sauce, chili sauce or seafood cocktail sauce for Thousand Island Dressing. Add 1 tbsp diced pimentos.
