SCALLOPED STUFFED MUSHROOMS

20 large bay scallops
20 large mushroom caps, stems removed
1 lb unsalted butter
1 cup sherry
2 cups finely chopped scallions
Juice of 2 lemons
1/2 cup seasoned breadcrumbs

Wash scallops in cold water and set aside to dry. Soften butter and combine with sherry and lemon juice, then add scallions. Fill each cap with butter mixture. Place scallop in each cap, and then top each scallop with bread crumbs. Bake at 325 for 20 minutes, making sure scallops are fully cooked and caps are softened.
